Pineapple Coconut Loaf Recipe

Ingredients:

2 Tbsps of desiccated coconut
1/2 tsp of cinnamon powder
2 Tbsps of sugar
1/4 c of chocolate chips (semi sweet)
1/2 c of desiccated coconut
1/2 c of pecans; chopped
A can of pineapple (8 ozs); crushed & juices reserved
1 whole egg
1/2 c of sugar (brown); packed
2 c of bread mix (Homemade Crisco)

Instructions:

Preset oven 350 degrees F.

Mix together sugar and bread mix. Whisk egg by hand then stir the pineapples in, including the juices. Add this to the sugar mixture and mix well until just moistened.

Fold in the pecans, chocolate chips and half cup of flaked coconuts. Mix well and decant to a nine by five by three inches of bread pan that has been greased. Bake for an hour at 350 degrees F until set.

Let it cool for ten minutes and then place topping on top. For the topping, just mix two tablespoons of coconut, cinnamon and two tablespoons of sugar. Mix well together and then pour on top of the bread.
