Marshmallows Recipe
Ingredients:
1 c of corn (light) syrup
2 Tbsps vanilla (extract)
2.5 Tbsps gelatin (unflavored)
1.5 c of sugar (refined)
1/2 c of water
1/4 tsp of salt
Powdered sugar
Instruction:
Mix gelatin with ice-cold water and whisk inside a bowl. Let it stand for half an hour.
Mix sugar, syrup, dash of salt then half a cup of water into a saucepan and cook over moderate-low heat. Stir til sugar is dissolved thoroughly. Using a candy thermometer, increase temperature til it is 244bO (as in firm ball state).
Remove from heat, then using a mixer at lower speed setting, pour the syrup to mix with the gelatin prepared earlier.
Adjust to higher speed and continue to whisk til mixture becomes thicker and nearly three times the original volume while adding vanilla.
Sprinkle an eight by twelve inch glass pan generously with powdered sugar and pour in mixture. Sprinkle more powdered sugar on top and with wet hands, pat the mixture til it’s smooth.
Let it stand uncovered and let dry overnight. You can now cut the marshmallows using a sharp, dry and heated knife to bite-sized squares. Sprinkle more powdered sugar on the marshmallows before serving.
