Chinese Hot Mustard Recipe
Ingredients:
1/4 c mustard (dry)
1 tsp of sugar (refined)
1/4 c water (bring to boil)
2 tsps oil (vegetable)
Instruction:
Bring water to boil and add combined sugar and mustard (dry). Let the mixture stand for eight hours then serve. Keep refrigerated if not used.

Sour Cream Recipe
Ingredients:
2 c cream (light)
2 Tbsps buttermilk
Instruction:
Mix ingredients inside a well sealed glass container then shake to mix thoroughly. Let it stand for 24 to 48 hours or until it has thickened. Keep in refrigerator and always stir prior to serving.

French Dressing Mix Recipe
Ingredients:
1/4 c of sugar (refined)
1 tsp mustard (dry)
A pinch of powdered onion
1 1/2 tsp of paprika
1 1/2 tsp of granulated salt
Instruction:
Mix ingredients and blend thoroughly. Pack in airtight containers. Mix can last half a year if placed in a dry and cool place.
As a variation, add 1/2 cups more of sugar (making it 3/4 cup) the recipe and change celery seeds to paprika. Mark as Sweet Italian Dressing.
For French Dressing:
Mix using a jay (glass) one pack of the mix with three fourths cup oil (vegetable) then one fourth cup of vinegar. Shake and agitate to blend well then chill prior to serving.

Cajun Cocktail Sauce Recipe
Ingredients:
1&1/2 c of catsup (Heinz)
1/4 tsp of freshly cracked black pepper
1/4 tsp of sauce (Tabasco)
2&1/2 tsps of sauce (Worcestershire)
2 Tbsps of horse radish
1 Tbsp of onion; minced
2 garlic cloves; minced
1/2 c of hot sauce
Salt
Lemon juice
Instructions:
Mix ingredients together. Place inside an airtight container then place inside the fridge. Best served if cooled.

Italian Salad Dressing Recipe
Ingredients:
1/2 c marjoram (dried)
1/4 c basil (dried)
1/4 c oregano (dried)
1 1/2 Tbsp powdered garlic
1 Tbsp parsley (dried)
1 Tbsp onion flake (dried)
1/2 tsp pepper flake (red, crushed)
Instruction:
Mix all ingredients and store in airtight container (tightly close).
To make italian dressing, combine one and a half tablespoon of mixed ingredients, one fourth cup vinegar, a tablespoon of water with three fourths cup of oil (vegetable) & vinegar dressing.
Then shake ingredients in container then add pepper and salt to preferred taste.

Kitchen Bouquet Recipe
Ingredients:
2 c of water
1/2 c of sugar (brown)
Instructions:
Place sugar inside your saucepan and heat until melted and darkens in color. Make sure to stir constantly. Add the water mixing well then remove from heat then let cool for fifteen minutes.
Store inside a sealed bottle. Can be used to thicken gravy.

Caramel Sauce Recipe
Ingredients:
1 1/2 c sugar (refined)
3 Tbsps butter; softened
1/2 of water
1 c whipped cream (heavy); heat
1/2 tsp vanilla extract
Instruction:
Heat water (medium heat) inside a saucepan, place sugar then stir frequently.
Put on lid and increase heat a notch higher then cook two more minutes (mixture will release large bubbles). Remove lid and continue to cook til the mixture caramelizes (color changes to golden brown).
Remove pan and then add butter using a spoon (wooden). Pour in cream, constantly stirring then add vanilla (extract).
Put pan on low temperature, stirring mixture til all lumps are gone with mixture turning smooth. This can be served with cake (or ice cream), or stored in an airtight jar and refrigerated.
For Butterscotch (sauce), use brown sugar instead of white (refined) then add vinergar (cider, about two teaspoons) together with vanilla.

Teriyaki Sauce Recipe
Ingredients:
1/3 c of soy sauce
1 1/2 Tbsp ginger; peel and chop finely
2 Tbsp of sherry (medium dry) or Japanese rice wine (Mirin)
2 1/2 Tbsp of vinegar (apple cider)
2 Tbsp of sugar
Instruction:
Mix all ingredients and simmer til volume is about half a cup. Let it stand to cool.

Salad Dressing Mix, Tangy Recipe
Ingredients:
1 c of milk (powdered skim)
1/4 c of sugar (refined)
4 tsp onion (dried flakes)
2 tsp mustard (dry)
4 tsp crushed basil (dried)
A tsp powdered garlic
A tsp table salt
A tsp of lemon juices
1/2 c of water
3/4 c of mayonnaise (or salad dressing)
Instruction:
Mix milk, sugar, spices and all the dried ingredients (will make approximately one cup dry mixture).
Add one fourth cup dry mixture to water, lemon juices and mayonnaise and blend well. Keep remaining dry mixture in a tightly sealed glass jar for future use.

Taco Sauce Recipe
Ingredients:
2 c of tomatoes (canned)
1/2 medium-sized onion
1/2 tsp powdered oregano
1 garlic clove
2 pcs chilies (green)
dash of hot sauce (optional)

1 tsp salt
Instruction:
Mince garlic, chilies and onions then. Mix with tomatoes the mash (or blend) til smooth. Add in oregano, ground pepper, salt & a dash of hot sauce.

White Sauce Mix Recipe
Ingredients:
4 c powdered milk (instant, nonfat)
2 c flour (unbleached)
2 c margarine or butter
4 tsps salt
Instructions:
For White Sauce, mix all dry ingredients well then add butter (or margarine) and blend till it becomes like crumbs. Keep in airtight containers if not used.
Basic Sauce (White)
1/2 c of White Sauce Mix
1 c of water (cool)
Seasoning (pepper, herbs & spices) to taste
Combine mix with water and stir well. Simmer at low temperatures til smooth while constantly stirring. Season to taste.
As variations to the sauce, you may substitute water (all or just a bit of it) with either tomato juice or soup stock (chicken or beef). For cheese sauce, melt half to one cup of cheese (shredded cheddar) in the simmering sauce.

Mayonnaise Recipe
Ingredients:
1 pc egg; use yolk only
1/2 tsp of salt
1/2 tsp mustard (Dijon)
dash of cayenne
3/4 c olive oil
1 Tbsp vinegar

Mix yolk and spices using a glass bowl. Whisk to blend well, gradually adding oil til mixture is thick.

Ranch Dip or Dressing Recipe
Ingredients:
1 1/2 Tbsps of parsley (dried)
1/2 Tbsp ofchives (dried)
1/4 Tbsp of tarragon (dried)
1/2 Tbsp of pepper (lemon)
1/4 Tbsp of oregano
1 Tbsp of salt
1/2 Tbsp powdered garlic
Instruction:
Mix all ingredients using a medium-sized bowl. Transfer to a well sealed jar to use later.
For Ranch Dressing, add one tablespoon of mixture to half a cup of mayonnaise, half a cup of buttermilk then whisk well. Keep in refrigerator for an hour prior to serving.
For Ranch Dip, add two tablespoons of mixture to a cup of mayonnaise & a cup of yogurt (low-fat) or sour cream. Keep in refrigerator for a couple of hours then use as dip or topping in serving fresh vegetables/cooked potatoes.

Catsup Recipe
Ingredients:
24 lbs of tomatoes (ripe)
2 lbs of onion
1 lb pepper (sweet red)
1 lb pepper (sweet green)
9 c of vinegar with 5 percent acidity
1/4 c salt (canning or pickling)
9 c of sugar (refined)
3 Tbsps of mustard (dry)
1 1/2 Tbsp pepper (red & ground)
1 1/2 tsp of allspice (whole)
1 1/2 Tbsps cloves (whole)
3 sticks of cinnamon
Instruction:
Rinse ripe tomatoes then blanch in rolling-boil water for 1/2 to 1 minute. Dip blanched tomatoes in iced-cold water, remove skins and core then slice to quarters.
Seed and core the sweet green and red peppers then slice to strips (thin and long). Clean the onions and cut to quarters.
Using a food processor, combine tomatoes, onions and peppers then process (at high speed) for about five seconds. Put in large pot, bring to boil and stir often.
Pour in the vinegar, salt, sugar and spices (use a spice bag – put in the mustard, pepper then the rest of the spices).
Allow to boil while constantly stirring til volume reduces to 1/2 of the original and the mixture homogenizes (solids and liquids do not separate). Fill in containers (not to the brim, but leave some headspace).
Close and boil in water (the jars with mixture) for a quarter of an hour (15 minutes) or a bit more.

Honey Mustard Dressing Recipe
Ingredients:
1 c of olive oil (virgin)
1/4 c of vinegar (apple cider)
1 1/8 c honey (pure)
1/2 mustard (Dijon, jar)

Combine ingredients in a mixing bowl and whisk well. Keep in refrigerator for a few hrs. before serving.

Ingredients:
1/2 c of raisins
1 tsp salt (to taste)
2/3 c of ketchup (Heinz)

4 ozs of apple sauce
2 Tbsps salad dressing (Wish Bone Italian)
Instruction:
Combine the ingredients and using a food processor, blend/run intermitently (on and off) for two minutes with setting at high. Keep in refrigerator.

Hot Fudge Sauce Recipe
Ingredients:
1 c milk (sweetened, condensed)
1 c sugar (refined)
1/4 c syrup (light corn)
4 Tbsps of butter
1 tsp vanilla
5 ozs of chocolate (semisweet)
Instruction:
Mix ingredients then cook at low temperature using a double boiler. Stir frequently til chocolate melts and fudge sauce becomes smooth. Pour in sterile glass jars and place in refrigerator (can keep in about four weeks). Warm or reheat before serving with favorite desserts.

Pizza Sauce Recipe
Ingredients:
1 can of tomato puree (28 oz)
1 Tbsp seasoning (Italian)
3 Tbsps olive oil
Instruction:

Ingredients:
1 c of blue cheese (Roquefort)
1 Tbsp sauce (Worcestershire)

Ingredients:
2 ozs chocolate (semisweet for baking)
2 Tbsps of butter
1.5 c sugar (refined)
1/2 c water (bring to boil)
1 tsp of vanilla extract

Using a double boiler, melt the chocolate, stirring in the butter and then the boiling one half cup of water. Add salt and sugar. Cook for another fifteen minutes, stirring on occasion.
Turn off heat then pour vanilla. Best served warm or if need, microwave at high for a minute. Store in sterile jars (glass). Allow mixture to get cool prior to refrigeration.

Ingredients:
1/4 teaspoon of cardamom (ground)
1/4 teaspoon of mace (ground)

Instructions:
Mix together spices, salt and pepper. Store inside a sealed jar or bottle.

Sweet & Sour Barbecue Sauce Recipe
Ingredients:
1/4 c of sherry cream
3 Tbsps of honey
1/2 tsp grated ginger
1/3 c soy sauce
2 garlic cloves; press them flat
3 Tbsps of vinegar
Instruction:
Combine cream sherry and honey and blend til smooth and consistent. Add in soy sauce, garlic then grated ginger. Stir well. Pour in vinegar. Sauce can be thickened with cornstarch mixed with water.
Brush mixture on meat while grilling. For a Mexican twist, sprinkle with powdered chili and/or cayenne pepper.
You may also add a little bit of mint when cooking lamb, powdered curry and a dash of cinnamon for beef and sugar (brown) and a bit of cinnamon for pork.
