Lemon Poppy Seed Muffins Recipe
Ingredients:
2 c of mix (Master Muffin)
2 tsps of lemon juice
1 Tbsp of poppy seeds
1/2 c of milk
1/4 c of oil (vegetable)
1 cup vanilla or lemon pudding (4 oz)
1 whole egg
Instructions:
Preset oven 375 degrees F. Beat the eggs, oil, milk and pudding. Fold seeds in. Add the almond essence then lemon juice.
Stir muffin mixture in and mix ’till just moist. Grease two small muffin trays and fill each cup about three quarters up.
Bake thirteen minutes ’till tops are golden brown. Best when serve warm. Yields two dozen muffins.

Applesauce Raisin Cake Recipe
Ingredients:
1 c of raisins
1.5 tsps of cinnamon powder
1/2 c of nuts; chopped
3/4 c of apple sauce
1/8 tsp of cloves

Instructions:

Pecan Glazed Cake Recipe
Ingredients:
2 c of Basic Cake (II) mixture
2 tsps of vanilla
1/4 c of softened butter (or margarine)
1/4 c of sugar (brown)
3/4 c of pecans; chopped

1 Tbsp of flour (all purpose)
1/2 c & 1 Tbsp of milk
Instructions:
Combine cake mixture, egg, half cup of milk, and a teaspoon of vanilla inside a mixing bowl; stir thoroughly till blended well. Pour on an 8 inch square baking pan. Bake (350 degrees F) for 25-30 mins.
While waiting for the cake, combine butter, flour, sugar, a tablespoon of milk, and a teaspoon of vanilla inside a bowl then mix thoroughly.
Fold the pecans into the mixture. Take the cake out from the oven; spread the mixture of butter above the cake. Bake again till bubbly.

Ingredients:

Raisin Bran Muffin Mix Recipe

1 c of almonds; chopped
1&1/2 c of cereal (raisin bran)
1 c of shortening
1/2 tsp of cinnamon powder
A tsp of salt

1 c of powdered milk (non fat)
1&1/4 c of sugar
Instructions:
Mix together flour, sugar, milk, baking powder, salt and cinnamon. Cut the shortening in until mixture resembles coarse crumbs.
Fold the nuts and cereal in. This can be stored inside a sealed container and can keep for two months.
Preset oven (400 degrees F).
For the muffins, just mix together four cups of the homemade mix, one egg then one cup of water. Mix until just moistened. Pour onto muffin trays that have been greased.
Bake for seventeen minutes until set. Let cool on a rack. Yields twelve pieces of muffins.

Peachy Upside Down Spice Cake Recipe
Ingredients:
1/4 c of butter (or margarine)
3/4 c of sugar (brown)
1/2 c of coconut; shredded
16 oz of peach slices (canned); drained well

3/4 c of blue berries (fresh or frozen)

Instructions:
Blend together flour, wheat germ, oats, milk and salt using a mixer or processor. Gradually decant oil through slot or inside the mixer while thoroughly blending ingredients, making sure to scrape sides all throughout.

Blueberry Scone Mix Recipe
Ingredients:
1 c of blue berries (dried)
1/3 c of shortening
1/4 tsp of salt
A tsp of lemon rind
2 tsps of baking powder

Instructions:
Sift flour together with sugar, lemon rind, baking powder and milk. Add the salt and cut the shortening in using pastry knives. Mix until mixture is all crumbly.

3-1/3 c of shortening; softened
7-2/3 c of sugar (granulated)
5 Tbsps of baking powder (double acting)
11 c of flour (all purpose); sifted

Beat the softened shortening moderately inside a bowl for half a min. Scrape the bottom and sides of the bowl; beat again moderately for half min. Gradually add the sugar, about four cups, while beating continuously.
Combine flour, salt, remaining sugar, and (baking) powder inside a bowl; sift them three times and add two cups onto the sugar mixture.
Beat moderately for half a min then pour onto the bowl with the flour; cut till it resembles cornmeal and blended well.
For storage, divide into six portions equally, about 3.5 cups for each portion. Place inside zipper bags, sealed, or airtight jar, covered. Store on dark and cool place for one month at most. Store inside freezer for a longer storage time.

Pancakes Recipe
Ingredients:
1.5 tsp of sugar
1&1/4 c Quick Pancake mix
3/4 c of water or milk
1 whole egg; slightly beaten
Instructions:
Mix together water or milk and egg. Using a separate bowl, mix together sugar and Quick mix. Add in the egg mix and stir just enough to combine.
Set it aside for five minutes. Preset griddle and then decant one third cup of pancake batter to the heated griddle. Cook ’till the edges are toasted then bubbles are formed.
Flip to the other side and cook for half a minute. Cook the remainder of the batter. Yields four pan cakes.

3 ozs cream cheese (room temperature)

For the frosting, cream the cheese and butter together until airy and soft. Pour vanilla and sugar then beat until velvety smooth in consistency. You can thin this using juice or milk.

Ingredients:
2 c of powdered sugar
3 Tbsps powdered milk (nonfat)
6 Tbsps of shortening (vegetable)
Instruction:

Preset oven 400 degrees F. Mix together bread mix, orange rind and sugar. Whisk the eggs and juice by hand. Add this to the bread mix.
Mix well. Clean the blue berries then fold them in the mixture slowly. Decant batter onto a muffin tray that has been greased. Bake for twenty minutes until nicely golden in color.

Ingredients:
1 1/4 c of shortening (Crisco)
1 Tbsp of salt
3 Tbsps of baking powder
6 c of flour (all purpose); unbleached
Instructions:
Blend together the flour, salt and powder (baking). Cut the shortening in using pastry knives ’till mixture is like coarse crumbs. Store inside an airtight container.
As a variation, use three cups of flour plus three cups of wheat flour (whole wheat) for health conscious cake lovers.
