Three Peppercorn Bread Mix Recipe

Ingredients:

3-1/3 c of flour
2 Tbsps of milk (dry)
1-1/2 Tbsps of sugar
1/3 c of cornmeal
A tsp of coarse pepper (black)
1/2 tsp flakes of pepper (red)
1/2 tsp of paprika
2-1/2 tsps of yeast (active, dry)

1-1/8 c of water
2 Tbsps of oil (olive oil)

Instructions:

Place paprika and peppers inside a Ziploc bag; set on the side. Place yeast inside a Ziploc; set on the side. Combine flour, milk, sugar, and cornmeal inside a jar; place bag above the mix then close the lid tightly. Store till needed.

Place ingredients inside the (bread) pan according to the recommendations for your machine.

Place pan inside the machine; select the “white” setting, preferred color of the crust, size of the loaf, and cycle for baking. Select the option for delay then press “start”.

Honey Blueberry Bread Recipe

Ingredients:

1.5 c of blue berries (fresh or frozen)
1 Tbsp coffee (store-bought, instant)
1/3 c of honey
1/2 c of water
2 whole eggs
1.5 tsps of lemon rind
1/2 c of pecan; chopped
1/4 c of sugar
3 c of bread mix (Homemade Crisco Quick Mix)

Instructions:

Preset oven 350 degrees F.

Mix together bread mix, pecans, sugar then the lemon rind. Whisk the eggs, honey, water and instant coffee. Mix in with the bread mixture and then stir just enough to moisten.

Clean blue berries and slowly fold berries in the mixture. Decant batter to a nine by five by three inches loaf baking tray. Bake for an hour ten minutes until set or golden in color.

Set aside to cool for ten minutes then transfer to a wooden rack. Slice and serve.

Cinnamon Granola Bread Mix Recipe

Ingredients:

4 oz of unopened applesauce (baby food)
2-1/4 c of flour (whole wheat)
1-1/4 c of flour
3/4 c of granola
1/3 c of milk (dry)
4 tsps of sugar (brown)
3/4 tsp of cinnamon
2-1/2 tsps of yeast (active, dry)

1 c of water
1 Tbsp of vegetable oil

Instructions:

Put yeast inside a Ziploc bag; set on the side. Combine flours, granola, milk, sugar, and cinnamon inside a jar then place bag above the mixture then close the lid tightly. Store along with the unopened applesauce till needed.

Place ingredients onto the (bread) pan, according to the instructions and recommendations of (bread) maker.

Place pan onto the machine; select whole wheat, preferred color of crust, size of loaf, and cycle for baking. Select option for delay then press “Start”.

Note: See and check the dough 5 mins to cycle for mixing, dough must be smooth and soft. If too dry, gradually add a teaspoon of liquid. If too moist, gradually add a teaspoon of flour.

Ingredients:

Cream cheese
1 c of applesauce (un-sweetened)
1 whole egg
1/4 tsp of nutmeg powder
1 c of nuts; chopped finely

2 c of bread mix (Homemade Crisco)
1/2 tsp of cinnamon powder
1/2 tsp of bicarbonate of soda

Instructions:

Preset oven 350 degrees F.

Mix together bread mix, bicarbonate of soda, sugar, cinnamon nuts and nutmeg powder. Whisk eggs and add the apple sauce. Mix the egg mixture with the bread mixture then stir until just combined.

Pour batter onto nine by five by three inches of bread pan that has been greased. Bake for fifty minutes until nicely golden in color. Let it cool ten minutes. Serve alongside cream cheese.

Pineapple Coconut Loaf Recipe

Ingredients:

2 Tbsps of desiccated coconut
1/2 tsp of cinnamon powder
2 Tbsps of sugar
1/4 c of chocolate chips (semi sweet)
1/2 c of desiccated coconut
1/2 c of pecans; chopped
A can of pineapple (8 ozs); crushed & juices reserved
1 whole egg
1/2 c of sugar (brown); packed
2 c of bread mix (Homemade Crisco)

Instructions:

Preset oven 350 degrees F.

Mix together sugar and bread mix. Whisk egg by hand then stir the pineapples in, including the juices. Add this to the sugar mixture and mix well until just moistened.

Fold in the pecans, chocolate chips and half cup of flaked coconuts. Mix well and decant to a nine by five by three inches of bread pan that has been greased. Bake for an hour at 350 degrees F until set.

Let it cool for ten minutes and then place topping on top. For the topping, just mix two tablespoons of coconut, cinnamon and two tablespoons of sugar. Mix well together and then pour on top of the bread.

Basic Cornbread Mix Recipe


Basic Cornbread Mix Recipe

Ingredients:

For the Basic Cornbread Mix:
4 c of flour (all purpose)
1 Tbsp of salt
4 Tbsps of baking powder (Calumet)
1 c of shortening
1 c of sugar (refined)
4 c of cornmeal (yellow)

For the Cornbread or Muffin:
2-1/2 c of basic cornbread mixture
1 pc of egg; beaten
1-1/4 c of milk

Instructions:

Combine salt, flour, Calumet, and sugar inside a mixing bowl; cut in shortening till it resembles crumbs. Add cornmeal them mix thoroughly. Store inside airtight jar or container, refrigerated. This can be kept for 3 to 4 months.

(Cornbread or Muffins)

Combine cornbread mixture, milk, and egg; mix gently till blended, don’t overmix. Pour onto a greased 8 inch square baking pan (or muffin pan).

Bake inside the oven at 425 degrees F for 25 mins or till done (muffins take less than 25 mins).

When the dough is done, follow the instructions on making bagels.

Instructions:

Put yeast inside another Ziploc bag; set on the side. Combine flour, sugar, and salt inside an airtight jar; place bags above the mix then close the lid.

When ready for using, cover the raisins with (warm) water; soak for 10 mins and drain. Place above paper towel(s) to absorb excess water.

Pour sugar and cinnamon inside a bowl; toss them well. Follow the instructions in your bread machine and add the ingredients on the (bread) pan.

Place pan inside the machine; select dough setting and the size of loaf. Select all the desired settings then start the process. After dough is done, follow the instructions on making bagels.

Olive Quick Bread Recipe

Ingredients:

Cream cheese
3/4 c of milk
1 whole egg
1 c of olives (green); stuffed with pimiento
1 c of cheese (Colby or Cheddar); grated
1 c of nuts; chopped
1/4 c of sugar
2&1/2 c of bread mix (Homemade Crisco)

Instructions:

Preset oven (350 degrees F)

Mix together sugar, bread mix, cheese, olives and nuts. In another bowl, whisk the milk and eggs by hand. Add the egg mixture to the Crisco bread mixture and mix until moistened.

Pour batter onto nine by five by three inch bread pan then bake for an hour. Let it cool ten minutes then serve alongside cream cheese.

Ingredients:

1/2 c of melted butter
1 c of milk
1/2 c of sugar
2 whole eggs
1 pack bread mix (California Corn Bread)
1 Tbsp baking powder
1/2 c of corn meal
2 c of Bisquick baking mix

Instructions:

To make corn bread cake mix, mix together cornmeal, Bisquick mix, half cup of sugar and baking powder. Store inside zip lock bags or tightly closed containers.

To make the California Corn Bread, transfer corn bread mix inside a medium sized bowl. Add two eggs, one cup of milk, then half cup of melted butter.

Mix together then decant inside a buttered down baking dish. Bake at 350 degrees F for half an hour.

Pan Rolls Recipe

Ingredients:

6 c of roll mix (hot)
1/2 c oil (vegetable) or margarin; melted
2 whole eggs; whisked
1&1/2 c of tap water
1 Tbsp yeast (active dry)

Instructions:

Dissolve the yeast using tap water. Mix in the eggs then margarine or oil. Add the five cups of Hot Roll Mix. Mix thoroughly.

You can add more mix in order to soften the dough but do not make it into a sticky consistency. Knead the dough five times. Lightly grease one mixing bowl. Transfer dough inside.

Smear butter on top of dough. Place a slightly wet dish cloth to cover the bowl then leave the bowl some place warm then let the dough rise until double in volume. Meanwhile, lightly grease one thirteen by nine inch baking dish.

Remove dishcloth cover from the dough and press down the dough. Make about thirty small balls equal in size. Transfer balls inside your baking dish.

Cover the baking dish again with the damp dishcloth then let it rise to double its size. Bake for twenty five minutes (375 degrees F) ’till golden in color.

Ingredients:

3 c of flour (all purpose)
3 c of cornmeal
2-1/2 tsps of salt
1-1/2 c of milk (dry)

3 Tbsps of sugar (refined)

2-1/2 c of basic cornbread mixture
3/4 c of shortening
1 c of water
3 pcs of beaten eggs

Instructions:

Combine flour, cornmeal, milk, baking powder, salt, and sugar; blend them well. Place inside an airtight jar/container or Ziploc bag. Store till needed.

To use, place the cornbread mixture inside a mixing bowl. Add shortening and cut till mixture resembles crumbs. Combine eggs with water; blend them well and add onto the crumbled mixture. Mix them well.

Bake (425 degrees F) for 15-20 mins or till done.

2 whole eggs
1/2 c of oil (vegetable)
6 tsps of salt
6 tsps of bicarbonate of soda
12 tsps of baking powder
12 c of flour (all purpose)
6 c of sugar (white)

Instructions:

Mix together flour, baking powder, bicarbonate soda, salt and sugar. Can be kept in an airtight container for up to six months.

For the bread, mix together 3 cups of your homemade mix, eggs, oil and one cup of fruits/vegetable. Mix in your favorite flavorings, raisins or nuts. Decant onto bread pans.

Pop in the oven for forty five minutes (350 degrees F) until set.

Ingredients:

2 tsps of baking powder
4 tsps of bicarbonate of soda
8 c of flour; sifted
2 tsps of cinnamon powder
2 Tbsps of ginger powder

Instructions:

Sift together flour, baking powder, baking soda, cinnamon, ginger and salt. Cut one and one half cups of shortening and mix thoroughly until mixture resembles coarse crumbs.

Store inside airtight containers. For the ginger bread, mix together 2 cups of ginger bread mix, three fourths cup of molasses, three eighths cup of milk plus one egg. Blend thoroughly.

Decant onto greased loaf tin and bake for half an hour (375 degrees F).

Bagel Mixes Recipe

Ingredients:

Dough
12 c of water
1 Tbsp of sugar
Cornmeal

Egg Wash:
1 pc of egg; beaten with
1 Tbsp of water

Instructions:

Pinch off a piece of prepared dough and make two 1/4-inch balls; set on the side. Place dough onto floured board then divide equally into eight sections. Form them to balls then press gently onto its middle; gently stretch, forming a smooth bagel. Cover with cloth and let them rise above the floured board.

While waiting for bagels, boil the water. Once boiling, add sugar then stir till dissolved. Drop the saved balls then wait till they float. Once they float, bagels can now be cooked inside (boiling) water.

Drop 2-3 bagels and cook for 1-1/2 mins per side. Take out from the water then let it cool above a rack, at about 1 min. Brush egg mixture (egg wash) on the boiled bagels then sprinkle poppy or sesame seeds. Spread cornmeal on cooking sheet(s) and arrange the prepared bagels on top.

Bake inside the oven, 400 degrees F, at about 12 to 15 mins or till golden.

Variation:
To create (bagel) sticks, cut bagels before letting them rise. Lay them to straightened lines. Allow to rise and follow same instructions as with the round bagel.
