Carrot Cake (and frosting) Recipe

Ingredients:

1/2 tsp of vanilla
3 ozs cream cheese (room temperature)
1&2/3 c of sugar
1 c of carrots; grated
3 Tbsps of butter (room temperature)
1/2 c of nuts; chopped
1/3 c of oil (vegetable)
1 tsp of cinnamon powder
1 whole egg; whisked
3/4 c of juice (orange)
1 pack mix (Snack Cake)

Instructions:

Place cake mix inside a nine inch baking tin (square). Using a separate bowl, mix together egg, carrots, juice, cinnamon and oil. Beat well by hand using a fork.

Decant egg mixture into cake mix and mix thoroughly. Fold the nuts in. Bake for forty five minutes (350 degrees F) ’till set and top is golden.

Frost cream cheese on top.

For the frosting, cream the cheese and butter together until airy and soft. Pour vanilla and sugar then beat until velvety smooth in consistency. You can thin this using juice or milk.
