Blueberry Syrup Recipe
Ingredients:
1 c of blueberries
1.5 tsps of cornstarch
1/2 c of juice (apple)
2-3 packets of artificial sweetener (Equal)
1/2 tsp of lemon zest; shredded finely
1 Tbsp of juice (lemon)
1 Tbsp of margarine (or butter)
Instructions:
Combine blueberries and (apple) juice inside a processor; process to puree. Transfer on a small saucepan and add cornstarch; stir thoroughly.
Cook till bubbly and thickened, while stirring constantly. Continue to cook for another 2 mins while stirring constantly.
Take out from the heat and add the artificial sweeteners, (lemon) juice, margarine, and zest; stir thoroughly. Serve it over waffles, toast, or pancakes.
