Basic Cornbread Mix Recipe
Ingredients:
For the Basic Cornbread Mix:
4 c of flour (all purpose)
1 Tbsp of salt
4 Tbsps of baking powder (Calumet)
1 c of shortening
1 c of sugar (refined)
4 c of cornmeal (yellow)
For the Cornbread or Muffin:
2-1/2 c of basic cornbread mixture
1 pc of egg; beaten
1-1/4 c of milk
Instructions:
Combine salt, flour, Calumet, and sugar inside a mixing bowl; cut in shortening till it resembles crumbs. Add cornmeal them mix thoroughly. Store inside airtight jar or container, refrigerated. This can be kept for 3 to 4 months.
(Cornbread or Muffins)
Combine cornbread mixture, milk, and egg; mix gently till blended, don’t overmix. Pour onto a greased 8 inch square baking pan (or muffin pan).
Bake inside the oven at 425 degrees F for 25 mins or till done (muffins take less than 25 mins).
