Bagel Mixes Recipe
Ingredients:
Dough
12 c of water
1 Tbsp of sugar
Cornmeal
Egg Wash:
1 pc of egg; beaten with
1 Tbsp of water
Instructions:
Pinch off a piece of prepared dough and make two 1/4-inch balls; set on the side. Place dough onto floured board then divide equally into eight sections. Form them to balls then press gently onto its middle; gently stretch, forming a smooth bagel. Cover with cloth and let them rise above the floured board.
While waiting for bagels, boil the water. Once boiling, add sugar then stir till dissolved. Drop the saved balls then wait till they float. Once they float, bagels can now be cooked inside (boiling) water.
Drop 2-3 bagels and cook for 1-1/2 mins per side. Take out from the water then let it cool above a rack, at about 1 min. Brush egg mixture (egg wash) on the boiled bagels then sprinkle poppy or sesame seeds. Spread cornmeal on cooking sheet(s) and arrange the prepared bagels on top.
Bake inside the oven, 400 degrees F, at about 12 to 15 mins or till golden.
Variation:
To create (bagel) sticks, cut bagels before letting them rise. Lay them to straightened lines. Allow to rise and follow same instructions as with the round bagel.
